People in Wales will be able to learn about the benefits of eating wild game, where to find it and how to cook it with the launch of a new guide.
The guide features 50 top venues across the country where you can enjoy game plus a host of game recipes and cooking tips from leading chefs, with the foreword written by Welsh chef Hywel Griffiths from Michelin starred restaurant Beach House, Oxwich.
It has been produced by The Chefs Forum in collaboration with BASC and the British Game Assurance.
Annette Woolcock, BASC’s head of wild food, said: “Wales is home to an array of wonderful game, and we want to make sure the people of Wales get to try it and learn about its wonderful flavours and benefits.
“Game is a healthy, delicious and sustainable alternative to the more standard meats, and this guide is a one-stop shop of everything you need to know about making the most of this extraordinary meat.”
Louisa Clutterbuck from the British Game Assurance said: “The inaugural Welsh Game Guide is a celebration of game meat in Wales; featuring a wealth of expert knowledge and how best to utilise game. From the classic roasts to the modern twists this guide contains everything you need to know.”
On launching the guide, Welsh chef Hywel Griffiths added: “I was delighted to be approached to write the foreword. I’m a huge game lover and we have some of the best game in the world in our valleys and on our hills.
The Chefs’ Forum director Catherine Farinha said: “It was amazing to discover just how many brilliant restaurants, pubs and hotels there are in Wales with game on the menu.”
The guide will be available for free at a variety of shows this summer including the Pembrokeshire Show and the Welsh Game Fair.
